Hobo dinners are not only delicious but they’re also very easy to make. Salmon in foil on grill is no exception. Not only will you look fancy cooking for company, but the cleanup is a cinch.
Salmon foil packets are not your typical intimidating fish recipe. My kids love fishing and bringing their catch home for dinner. There’s always a higher level of difficulty cooking the meat properly. Comparatively, this is not an issue with salmon foil packets.

Maybe I should give you fair warning now. Once you join the hobo dinner lifestyle, you’re stuck there for good.
Above all, the hobo dinner is extremely versatile. One of our favorite hobo dinner recipes includes burger, potatoes and carrots. You can use virtually any kind of meat and veggies. I won’t bore you with anymore small talk. Let’s move onto the recipe!

Recipe Tips
- Select fresh wild caught salmon that is bright pink in color. It doesn’t matter if it still has the skin as it will easily fall off after cooking.
- Cooking in foil is by far the best option. Foil locks in the moisture and prevents the salmon from falling apart. However, you can cook the fish directly on the grill or in parchment paper if you prefer.
- Use a baking sheet or tray to carry your foil packets to the grill (& back!)
- Olive oil or other cooking oil may be used in place of butter.
- Cooking time will vary depending on the thickness of your salmon. An average size salmon filet will cook at approximately 375° – 400° F. If the filet is smaller than 1″ or larger than 1 1/2″ in thickness, adjust your cooking temperatures.
- Any type of grill will do, including gas or charcoal. Foil packets also do great in the oven if you don’t have a grill.
- Per the FDA, fish should be cooked to an internal temperature of 145° F. On the other hand, fish continues to cook as it rests. Therefore, I typically cook the fish to 140° and allow the filets to rest while they finish cooking. Additionally, you can use an instant read meat thermometer like the one shown below.

Equipment
- Grill – Gas or Charcoal
Ingredients
- 1 Filet Salmon – Fresh Wild Caught
- 2 Tbsp Butter
- 1 whole Lemon Sliced
- 1 Tsp Minced Garlic
- 3/4 Tsp Salt
- 1/4 Tsp Pepper
- Parsley
- Dill or Rosemary Optional
Instructions
- Set out a piece of foil large enough to wrap your salmon. Use either heavy duty foil or double wrap with regular. Spray foil with cooking spray.
- Add half of the lemon slices on the foil. Top with parsley, salt and pepper.
- Arrange the salmon on top of the lemon slices.
- Top salmon with remaining lemon slices, butter, garlic, parsley, salt and pepper.
- Seal the foil packet and grill! The salmon should be grilled at a temperature of 375° to 400° F for 15-18 minutes depending on thickness.
- Remove the salmon from the grill once the appropriate temperature has been reached or whenever the thickest part of the salmon is flaky.
- Toss the aluminum foil in the trash and enjoy the delicious salmon!
